SOUR CREAM MASHED POTATOES

Thinking About: Sour Cream Mashed Potatoes (serves 4)

  1. 4 large Russet Potatoes (large dice)
  2. Salted Water
  3. 4 oz. Butter Salt & Pepper (to taste)
  4. 3-4 oz. Whole Milk
  5. 2-3 oz. Sour Cream

In 3 quart pot, place diced Potatoes in boiling, Salted Water; cook until knife slides easily through thickest Potato piece (about 7-10 minutes)

When done, drain Potatoes with colander and return to pot…Do not cool

Add Butter and Milk

Using Potato Masher, mix until desired consistency is achieved

Salt & Pepper to your liking

Fold in Sour Cream…Do not over mix

Garnish with chopped Chives Serve mashed potatoes hot
